Georgia Green Collards are a traditional southern variety of non-heading cabbage also known as Southern Collards or Creole Collards. This variety of collards grows up to 2 to 3 feet in height and produces large, wavy blue-green colored cabbage like leaves. This variety is very popular in the American South where they are used to make traditional old fashioned Southern Greens and are increasing in popularity in other regions. Georgia Collards are both heat and cold tolerant and are also slow to bolt, so they are suited for just about any climate. A light frost, like with kale, will actually improve their flavor.
